APPLE DUMPLINGS

2 heaping tablespoons flour
2 cups white powdered sugar
3/4 tablespoon Cinnamon
6 tablespoons butter
2 teaspoons lemon juice
1 1/2 cups brown sugar
2 cups water

Prepare one recipe for baking powder biscuit dough.  Roll the dough to 1/8" thickness.  Pare and core and quarter the apples and place each quarter on a square of dough large enough to wrap it in.  Combine half cup of the white sugar with the cinnamon and sprinkle each apple quarter with one tablespoon of this mixture, dot each with 1/2 teaspoon butter and add a 1/4 teaspoon of the lemon juice.  Fold the squares of dough up around each apple quarter and place in a large shallow baking dish.

Meanwhile combine together and cook for ten minutes the rest of the white sugar, the rest of the butter, the brown sugar and the water, then pour this over the dumplings and bake in a moderate oven, about 375 for 45 minutes.  Serves 8.
