1 1/3 cups sifed "Swans Down" Cake flour
1 3/4 cups sifted granulated sugar
1 1/2 cups egg whites (13 to 15)
1/4 teaspoon salt
1 teaspoon cream of tartar
1 teaspoon vanilla
1/4 teaspoon almond extract

Sift flour once, measure, add 1/2 cup sugar and sift four (4) times.  Beat egg whtes and salt with flat wire whisk.  When foamy add cream of tartar and continue beating until eggs are stiff but not dry.  Fold in remaining sugar, two (2) tablespoons at a time, until sugar is just blended.  Sift flour over egg whites about (2) tablespoons at a time, and fold in carefully, until all is used.

Turn into an ungreased 10-inch tube pan.  Bake at 300 for 30 minutes.  then, turn oven to 325 and bake for 30 minutes, or longer, until light brown on top

Upon removing cake from oven invert pan and leave until cool.
