MINT CAKES

6 oz. flour
4 oz. butter
4 oz. sugar
2 eggs
2 teaspoonsful Baking Powder
Icing sugar
Rind of 1 lemon
Essence of peppermint

Cream butter and sugar, add each egg separately and beat.  Add flour and grated lemon rind and a very few drops of epperming.  Bake in paper cups 15 to 20 minutes in moderate oven.  Ice with glac icing flavored pepperming and colored green.  Place 1/2 green cherry on each.
