Fill a pie pan FULL of peeled, cored and thinly sliced apples.  Sprinkle with granulated sugar and cinnamon or nutmeg and lemon juice, if desired.

TOP:  1/2 cup brown sugar
           3/4 cup of flour
           1/4 lb. of butter (a stick)

Mix well with a pastry blender and spread over top of apples.  Bake in a hot oven 10 minutes—then turn heat to a medium oven and bake until apples are done.

Serve with shipped cream or plain cream.  (And a little bit of cheese.)  For berry or juicy fruit pies use one tablespoon of minute tapioca to each cup of sugar, mix well with sugar.  Will keep juice from running over.
