LEMON CHEESECAKES (English style)
Place the sugar, butter, grated lemon rind and strained lemon juice in double boiler, and stir until sugar is dissolved. Beat the eggs and add them, cooking slowly until mixture thickens. Stir constantly. Place in cool area until ready for use.
Line a muffin tin with pastry, fill three parts full iwth the lemon cheese, and bake in a moderate over for about 20 minutes.
Makes 15 to 20 cakes.
