JAMAICAN COCONUT BALLS

Ingredients:

1 ripe coconut
1 lb. brown sugar
1 small ginger root (or bitter chocolate)


Grate coconut, pour into boiling sugar in which has been pounded the ginger root.   Boil and stir constantly for about two hours or until the mass becomes slightly gummy.  Remove the ginger root and drop the mixtre with two large spoons into cool dish, molding into balls, size of egg.
