CREME DE MENTHE DELIGHT

2 lbs. loaf sugar
2 large cups boiling water
Sap green coloring
1/2 teaspoon oil of peppermint
2 oz. leaf gelatine
Icing sugar

Place sugar and gelatine in separate basins.  Pour 1 cup of water on sugar and other on gelatine.  Mix sugar and gelatine together when dissolved.  Pour into saucepan and bring to a boil.  Boil 8 minutes.  Flavor with oil of pepperming and color with sap green.  Pour into shallow dishes and leave till next day.   Roll in icing sugar on board, cut into pieces, place in tins or wooden boxes.
