CHEESE BISCUITS FOR COCKTAILS



9 oz. finely grated cheese
9 ox. flour
A few dashes of Cayenne pepper
1/8 teaspoon of salt
Mix these together

Put into center of mixture 8 oz. butter and mix all together with the hands into a very stiff paste.  Roll out to thickness required (a little flour will be needed to prevent sticking) and cut into rounds or shapes.  Put on cookie sheet and bake in a fairly hot oven.  When slightly browned (about 5 minutes) turn and leave for another 2 to 3 minutes.  Have ready a filling made of a cream cheese mixed with a little cream or milk and a little cayenne pepper.  Put this between two of the biscuits and serve hot.  Half this quantity may be made if only a small quantity is needed.
