HAM AND RICE CAKES


These are delicious and can be served with breakfast, or as a supper dish.  Mince ham scraps then mix into a cupful of cooked rice.  Add two tablespoonfuls of melted butter and season with salt, pepper and a little lemon rind.  Sprinkle some dry mustard over the mixture and bind all together with gravy or a beaten up egg.  For the mixture into round flat cakes, using a little flour, dip in beaten egg then breadcrumbs.  Deep fry until golden brown.
