DOWN EAST CLAM CHOWDER


1/3 lb. salt pork diced
2 small onions minced
2 cups diced potatoes
2 cups boiling water
2 teaspoons salt
1/8 teaspoon pepper
2 cups milk
1 can or 1 1/2 cups minced clams

Chop or dice salt pork —fry slowly in saucepan.   Add onions and sauté 5 minutes.  Then add potatoes, hot water and seasonings, boil covered 15 minutes. Add milk and clams and bring to a boil.  If fresh clams are used chop or grind 1 pint and cook in their own liquor 5 minutes.  then add to soup mixture.  Pour into heated bowls over crackers.  Fish may be substituted for clams.
