HARICOT BEAN SOUP (English style)


2 pints of stock or water
1 pint of milk
1/2 pint of small navy beans
1 oz. butter
1 onion
1 stick of celery
Salt and pepper to taste

Wash and soak the beans for 12 hours, melt the butter in a pan, add sliced onion and celery, and fry a few minutes without browning, then add the beans, cover tightly and steam for 20 minutes.  Add the stock or water with 1/2 a tespoonful of salt, and simmer for about 3 hours.  Strain, and rub the vegetables through a wire sieve, return to pan, add the milk and bring to boil.  Season to taste and serve.

Time about 4 hours.  Serves 3 persons.
