CHEESE AND TOMATO EGGS

One egg and tomato for each person.  Pepper. Salt. Onion. Parmesan, Cheddar, or Cheshire Cheese.

Have ready well buttered ramekin cases.  Slice 1 tomato into each one, having previously removed skins, season with pepper and salt and about 1/6 teaspoon of finely chopped onion.

Cut a fine layer of cheese over all—placing little nuts of butter here and there.  Lastly break egg on top, taking care to keep yolk whole.  Bake in moderate oven until set.
