One fillet of fish per person or more if desired.  Butter a fire-proof dish and chop very finely a small quantity of onion and parsley.  Place fish on this, cover with butter paper and bake in oven, for 30 minutes.

Meanwhile make a very smooth white sauce.  When the fish has been baked and is cool, pour over it about 1 coffee cup of sherry.  Add champignons or shrimps (or both) to the white sauce.  Pour the sauce over the cooled fish, sprinkle about 2 oz of Parmesan cheese over the top and put in the oven to brown.
