Cut a boiled lobster into small pieces and mix with an equal quantity of white of hard-boiled egg.  The eggs should be cut into slices and then into quarters of halves.  Mix well with rather thin mayonnaise sauce.   The whole should be about the consistency of macaroni cheese.  Put on ice till iced—not hard enough to set, but as cold as iced coffee is usually served.  Serve as hors d'oeuvres or as a first course for luncheon.   Seasoned and whipped cream can be used instead of mayonnaise.
