TONGUE WITH ALMONDS
Raisin Sauce

Slices of tongue
Candied peel
Chocolate
Tomato
Butter
Raisins
Almonds
Vinegar
Sugar

Fry some slices of onion in a saucepan, and add to them as many slices of tongue as are required; frying them very lightly.  to this add a little tomato purée mixed with stock and let all simmer very gently.

Put into a basin a tablespoonful of vinegar, a few chopped almonds and stoned raisins and a very little grated chocolate, also a few strips of candied peel.  Mix together and pour over the tongue in the casserole.  Cook for 5 or 10 minutes and serve.
