CURRIED VEAL OR OTHER MEATS
|1 pound cooked veal or other meat
1/2 pint curry sauce
1 cup rice
|Remove all skin and fat from the
meat and cut it into small thin slices or squares. Make the curry sauce and let the
meat simmer in the sauce for at least a half hour, then serve with boiled rice.
Sufficient for 3 to 4 persons.
Curry Sauce: 3/4 pint of stock or water; 1 1/2 ounces of butter; 1 tablespoonful curry powder; one dessertspoonful of flour, one tomato sliced; one small onion sliced, and a pinch of salt. Melt the butter in pan, fry the onion till lightly brown, add the flour and curry powder, stir and cook gently for a few minutes, add the water and bring to a boil, put in the tomato and salt. Simmer gently for twenty minutes, constantly stirring to avoid burning.
