DEVONSHIRE SAUSAGE CAKES

1/2 lb. lean pork
1/2 lb. fat pork
1 oz. bread crumbs
1 teaspoon chopped sage
Apples Pepper and salt

Soak bread crumbs in a little water.  Pass pork and bread crumbs through a fine meat mincer twice, season with pepper, salt and sage.  Rub basin in which meat is minced with a piece of onion.  Divide mixture into 12 cakes, roll in flour and flatten with a knife.  Fry in butter until golden brown.

Serve on hot dish with fried apples.

Prepare apples as for apples.  Dip in flour and fry in butter until brown on both sides.  Serve sausage cakes on hot platter.
