MOCK SWEETBREADS

Cut 1 lb. fleshy veal into small pieces and shred down finely 2 oz. beef suet, pass these through meat grinder two or three times until fine and thoroughly blended then add 1 cupful breadcrumbs which have been soaked in half cupful of milk or cream and season with pepper, salt, the grated rind of half a lemon.  Bind all together with a little beaten egg and form the mixture into small egg shaped pieces, using a little flour.  Coat these with egg and breadcrumbs and then brown them in a little hot fat.  Place them in a greased baking dish and pour a little gravy or brown sauce around, cover closely and cook in the oven about 1/2 hour.  Serve garnished with rolls of bacon.
