Andy's Corned Beef Log
loaf French bread (14-16 inches long)
1/2 c. mayonnaise
2 tbsp. minced celery
1/8 tsp. pepper
(12 oz.) corned beef
1/4 c. chili sauce
2 tbsp. hot dog relish
parsley, to garnish (optional)
About 45 minutes before serving, or early in the day, with sharp knife, slife loaf in half, crosswise. Hollow out loaf, leaving a shell.
In medium bowl, with fork, mix well: corned beef, mayonnaise, chili sauce, celery, hot dog relish, and pepper. With narrow rubber spatula, press corned beef mixture into both halves of bread. Place both halves together and slice or wrap to serve later.
Andy says this one is "super and easy" -- a real favorite at cast parties on the Atlantic side.
