Lakes O'Killarney

2 medium cucumbers
2 tbsp. mayonnaise
salt
16 slices, thinly sliced white bread
16 oz. pkg. cream cheese
chopped chives
parsley

1. Using the deep part of an open tea ball, cut two rounds from each slice of bread (a wine glass will work, but you will have to press much harder to make a sharp cut).

2. Blend together cheese, mayonnaise, chives and a pinch of salt.  Spread on bread rounds.

3. Leaving peer on, slice cucumbers into thin wafers.  Place a slice on top of the cheese mixture on each round.

4. Add a dollop of cheese mixture in the center of the cucumber slice and press down a sprig of parsley for an island in the lake.
