Spinach Cocktail Balls (2)

2 pkg. frozen, chopped spinach, uncooked and thawed
2 1/2 c. grated Parmesan cheese, at room temperature
4 eggs, beaten
2 c. herbed stuffing mix

1/4 tsp. thyme
1/2 tsp. Accent (optional)
1/2 lb. oleo, softened
1 onion, finely chopped
1/2 tsp. garlic salt or powder
1/4 tsp. paprika


Beat eggs and oleo until fluffy.  Add seasonings, spinach and cheese.  Then add stuffing mix and combine, using hands if necessary.  If necessary, psrinkle in a little hot water so that all dressing is just moist.  Roll mixture into 1 inch balls and bake on greased cookie sheets at 350 for about 15 to 20 minutes and serve.   Cooked balls may be frozen for later use.  Heat, covered in microwave or uncovered in convectional oven.
