Fresh Apple Cake

 

3 c. flour
2 c. sugar
1 tsp. baking soda
1 tsp. cinnamon
1 c. chopped nuts
3 c. diced tart apples
1 1/4 c. oil
2 eggs, well beaten
2 tsp. vanilla

Stir dry ingredients together; add apples and nuts; stir.  In separate bowl, beat eggs and add oil and vanilla; add egg mixture to dry ingredients and mix well.   Put into greased Bundt pan.

Bake at 325 for 1 1/2 hours.  Cool for 30 minutes and glaze (or serve with whipped cream when cake is completely cooled.

Glaze:

1/2 c. sugar
1/4 tsp. nutmeg
1/2 c. water
1 tsp. vanilla
1/4 tsp. cinnamon
1 Tbsp. flour
1 Tbsp. butter

Put dry ingredients into pan and mix.  Graduallly add remaining ingredients.   Bring to a boil for 2 or 3 minutes until thick.  Drizzle over cake.  This recipe can be used for a 13x9 but must be doubled.
