Fluffy White Frosting

3 Tbsp. flour
1 c. milk
1 c. sugar
1/4 tsp. butter flavoring
1/2 tsp. salt
1 c. white shortening
2 tsp. vanilla

Cook milk, flour and salt until thick, stirring constantly over medium-low heat.   Let cool.  Cream shortening and sugar until light and fluffy, then add flavorings.  Combine with milk mixture and beat until fluffy.  Spread on completely cooled cake.  There is enough for sides and top of three 9 inch layers.   It is especially pretty on red velvet cake.

Red velvet layers may be made by adding 1 1/2 ounce bottle of red food coloring as part of liquid to a chocolate cake.
