Molded Spinach Salad

2 pkg. lemon gelatin
3/4 c. cold water
1 c. mayonnaise
1/2 tsp. pepper
2 c. chopped spinach (frozen, thawed)
2 tbsp. chopped onion
2 c. hot water
1 tbsp. vinegar
1 tsp. salt
1 1/2 c. creamed cottage cheese
2/3 c. diced celery

Pour hot water over gelatin and mix well.  Add cold water, vinegar, mayonnaise, salt and pepper.  Beat with rotary beater until blended.  Place on ice cube tray for 20 minutes.

Turn mixture into cold bowl, the shape you want the mold.  Beat until fluffy.  Mix remaining ingredients and fold into mixture in the bowl.  Refregerate for at least 4 or 5 hours.

Serve in lettuce nest.
