Eggs And Hash Brown Potatoes (Microwave)

1/4 c. chopped green pepper
2 tbsp. butter
1 1/2 c. finely choped ham
4 eggs
1/4 c. chopped onion
1 (12 oz.) pkg. frozen hash brown potatoes
1/8 tsp. pepper

1.  Combine green pepper, onion, and butter in 2 quart glass casserole.   Microwave, uncovered, at power level COOK for 6 minutes, stirring twice.  Add potatoes.  Cover and microwave at power level COOK for 9 minutes, or until partially cooked, breaking up twice.  Add ham cover and cook for 6 to 8 minutes, or until mixture is heated, stirring twice.

2.   Make 4 hollows in the potato mixture, evenly spaced, break the eggs into the indentations.  Pierce the yolks twice and the whites three times with a toothpick.   Sprinkle eggs with pepper.  Cover with a lid.  Microwave at power level COOK for 4 to 5 minutes, or eggs are done to taste, rotating dish 1/2 turn mid-way through cooking time.  Let stand, covered, 2 minutes before serving.

NOTE:  This is an excellent Brunch dish, very easy and quick.
