Chicken Geraldine

Cut 3 cloves of garlic and muddle them, using mortar and pestle, with about 2 teaspoons salt.  Add:

juice of 2 lemons
about 1/2 tsp. salt
2 tbsp. olive oil

Pour mixture over chicken pieces in shallow baking dish.  Add a little water, about 1/4 cup.

Bake, uncovered, at 350 for 45 minutes to 1 hour.  Baste often and turn once midway through cooking.   The chicken is crusty outside, moist and tender inside.
