Easy Panamanian Chicken

2 lb. chicken, cut in pieces
1 envelope dry onion soup mix
1 bottle (8 oz.) Russian dressing
1 jar (8 oz.) apricot or peach preserves

Place chicken pieces flat in a 9x12 baking dish.  Mix remaining ingredients thoroughly.  Spoon over chicken.  Bake covered for one hour in a 350 oven.   Serve over a bed of rice.
