1 pork tenderloin (2 lb.)
2 c. spaghetti sauce (with or without meat)
1/2 c. Parmesan cheese
2 eggs
salt and pepper to taste
3/4 c. bread crumbs
3/4 c. Mozzarella cheese, shredded
1/4 c. vegetable oil

Dip tenderloin in whipped eggs seasoned with salt and pepper.  Roll in bread crumbs, then brown in oil in a skillet.  When fully browned, place in a shallow baking pan.   Pour on the spaghetti sauce and sprinkle liberally with Parmesan cheese.   Cover with foil and bake for 1 hour at 350.  Remove foil and sprinkle on the Mozzarella cheese.  Bake uncovered for 15 minutes.  Serve with pasta, salad and bread.  Serves 6.
