Spanish Rice

4 tbsp. butter, melted
1 green pepper, minced
2 c. cooked tomatoes
1/8 tsp. black pepper
1/2 c. cheddar cheese, grated
1 onion, minced
1/4 c. celery, diced
2 tsp. salt
1 c. uncooked rice
6 strips bacon, cooked, crumbled

Cook rice, according to package directions.  Melt butter in akillet, add onion, green pepper and celery.  Simmer until tender.  Add tomatoes, salt and pepper.   Simmer for 15 minutes longer.  Sprinkle wtih grated cheese and crumbled bacon.   Serve hot.

Makes about 8 servings.
