Cheese Strata

8 eggs
1 tsp. salt
1/2 tsp. dry mustard
16 slices egg bread
12 oz. Swiss cheese, sliced
4 c. milk
1/8 tsp. pepper
2 tbsp. dry onion flakes
12 oz. cheddar cheese, sliced

Butter a 9x13 baking dish.  Trim crust from bread and place 8 slices of bread on bottom of dish.  Cover with 6 ounces cheddar and 6 ounces Swiss cheese.   Sprinkle 1 tablespoon onion over all.  Repeat with second layer of bread, cheese and onion.

Beat eggs, milk, salt, pepper and mustard.  Pour over cheese mixture.  Refrigerate overnight (or at least 12 hours).

Bake at 350 for 1 hour or until puffed and lightly browned.  Serves 10.
