Joan's Special Potatoes

2 lb. potatoes, peeled
1/4 c. margarine
3 tbsp. chopped parsley
salt and pepper to taste
1 medium onion, chopped
1/2 pt. sour cream
dash of lemon juice

Cook potatoes which have been cut into medium size pieces, or use small whole potatoes.   Drain and set aside.

Saute onions in margarine.  When soft, add sour cream and cook until brown.  Add cooked potatoes, lemon juice, salt and pepper.  Cook for several more minutes.   Sprinkle with chopped parsley and serve at once.
