Delicious Pinto Beans - Quintanilla

3 c. pinto beans (soaked overnight)
2 tbsp. salt (or to taste)
1/4 tsp. black pepper
1 can whole tomatoes, mashed

5 slices bacon, cut into 1 1/2 inch strips
1 tbsp. chili powder
1/2 bell pepper, chopped
1/2 onion, chopped
2 cloves garlic

Fry bacon until crisp.  Add chopped onion, bell pepper, 1 clove of mashed garlic, and mashed tomatoes.  Cook with bacon just at a simmer for a few minutes to make sauce.   Add to bean pot and simmer until beans are cooked, about two hours.

For hotter taste, add some chopped jalapeno pepper.
