Spinach With Cheese (Microwave)

2 (10 oz.) pkg. frozen, chopped spinach, thawed and well drained
2 eggs
1/2 tsp. salt
1 c. cottage cheese
1/2 cup. shredded Swiss cheese
1/4 c. Parmesan cheese
1/2 tsp. ground thyme
1/4 tsp. pepper

Allow spinach to thaw and drain in colander.  Combine all ingredients, in a 2 quart mixing bowl.  Blend thoroughly.  Pour mixture into microwave safe dish,(ring mold is perfect if you have one.  Cover with waxed paper.

Microwave at power level COOK for 10 to 12 minutes, or until mold is set, rotating the dish 1/2 turn twice during cooking time.  Let stand covered, 5 minutes.  If prepared in a mold, turn out onto serving platter, garnish with buttered bread crumbs or cherry tomatoes.  Remember microwave ovens vary in their cooking times!

*This is a great side dish for steaks or chicken.
