Mango Bread

Ingredients:
1 1/2 cups butter or oil
2 1/2 cups sugar
6 eggs
2 tsp vanilla extract
1/2 tsp coconut extract (optional)
4 cups flour
1 tsp salt
4 tsp baking soda
3 tsp cinnamon
4 cups mango puree
1 cup chopped nuts
Directions:
Cream butter or oil and sugar. Beat in eggs one
at a time. Add vanilla and coconut extract. Sift dry ingredients and add alternately with
the mango puree. Pour into three greased 5" x 9" x 3" loaf pans and bake at
350 degrees for 45-55 minutes or until a toothpick inserted in the center of the
loaf comes out clean. Turn loaves out onto a rack and let cool. If you are going to
use this for gifts, you might want to use 8 small foil loaf pans (check for doneness at 35
minutes) or a large bundt pan.
