APPLE CAKE

This makes an 8"x8" or 9"x9" cake.  To make it in a 9"x13" pan, simply double the ingredients all around.

Preheat oven to 350 degrees.

Ingredients:

2 cups peeled sliced apples  (I use Granny Smith, but any would be okay)
1 cup of sugar
2/3 cup of canola oil
1 egg slightly beaten
1/2 teaspoon salt
1 teaspoon vanilla
1 teaspoon cinnamon
1 teaspoon baking soda
1 1/2 cups flour - unsifted
1/2 cup nuts - optional


Directions:
Hand mix all ingredients together and spread in pan.  Bake for 50 minutes or until nicely brown.  This is wonderful warm, with some nice vanilla ice cream or real whipped cream.
