VINNIE MATTEA'S GRANDMA'S CHEESECAKE

Preheat oven to 375 degrees.  Use a 9 or 10 inch springform pan.

Ingredients:
4 pkgs - 8 oz cream cheese
2 cups sugar
6 eggs
2 teaspoons vanilla
2 pints sour cream

Crust:
1 cup graham cracker crumbs
1/3 cup sugar
3 Tablespoons melted butter

Directions:
Cream the cream cheese and add the sugar.  Then add eggs one at a time, beating after each egg.  Then add vanilla and sour cream. To prepare the crust, mix sugar and the graham cracker crumbs with the butter. Spread evenly in the pan pressing down firmly.  Pour filling over the crust and spread evenly.

Bake for one hour. 


This is the secret to great cheesecake: 
ONCE THE CAKE HAS BAKED FOR THE ONE HOUR, TURN THE OVEN OFF AND LEAVE THE CAKE IN THE OVEN FOR ONE HOUR WITH THE OVEN DOOR OPEN!!

This is a really wonderful cheesecake and goes great with sliced fruit or a raspberry puree, etc.
