LEMON OR LIME CATCHUP

Ingredients:

12 large lemons or limes (grated rind & juice)
1 tsp. mace
2 Tbsp sugar
4 Tbsp white mustard seed
2 Tbsp fresh grated horseradish
1 Tbsp turmeric
1 shallot, minced finely
1 tbsp white pepper
2 tbsp salt
1 tsp. cloves
dash cayenne pepper

Directions:

Mix ingredients together and allow to stand for three hours. Bring to a  boil and cook 30 minutes. Pour into a crock, cover loosely and allow to  stand for 2 weeks in a cool place, stirring well every day. Strain,  fill sterilized bottles and seal. Makes about 4 pints.
