Mango Bread #2

Ingredients:

2 c. flour
1/2 tsp. salt
3 eggs
1 1/2 c. sugar
1/2 c. chopped nuts
1/2 c. golden raisins (optional)
2 tsp. baking soda
2 tsp. cinnamon
1/2 c. vegetable oil (optional)
1 tsp. vanilla
2 c. diced mango
1/4 c. flaked coconut (optional)

Directions:

Sift flour, baking soda, salt, cinnamon and sugar in a large bowl. Make a well in center of dry ingredients. Add all remaining ingredients and mix well. Pour into greased loaf (or Bundt) pan and let stand 20 minutes. Bake at 350 degrees for 1 hour and 15 minutes or until done.
