PLANTAIN TORTILLAS

Ingredients:
2 or 3 ripe plantains  
1 tbsp. sugar 
1/2 tsp. baking powder 
Cooking Oil 

Directions:
Mash the plantains with a fork.  Place them in a  bowl and mix in the sugar and the baking powder. Blend well.  Shape small cakes of the plantain mixture and fry them in oil.   Serve warm.
