"Mary Jane" Fruit Cookies
Panama Canal Company Recipe


2 1/2 Cup Sugar
1 1/4 Cup Shortening
1 tsp Salt
1 tsp Baking Soda
4 cups All Purpose Flour
3 Eggs
1/3 Cup Water
1 1/2 tsp Vanilla
1 Cup Glazed Fruit
1 Cup Raisins

Preheat oven to 350.  In a large bowl cream Sugar, Shortening, Salt, and Baking Soda.  Put rest of ingregients in   Cuisinart until fruit and raisins are finely chopped.  Combine with creamed sugar in large bowl.  Add the 4 cups of Flour a little at time mixing well.  Use 1 tablespoon batter for each cookie.  Drop on non stick cookie sheet.  Bake for about 15 minutes.

Tip: If these get crisp after baking, add slice of fresh apple to cookie jar and cookies will stay soft.
