Mango Pizza

Mango Salsa:
1 ripe mango, peeled and cut in 1/2-inch dice
1/4 cup fresh cilantro, minced
1/2 Vidalia onion, cut in 1/2-inch dice
1 tbsp grated fresh ginger
1 small red bell pepper, diced
1/2 jalapeno pepper, finely minced
Cumin Lime Dressing:
3 tbsp corn oil
Juice of one lime
1/2 tsp salt
1/2 tsp ground cumin
1/4 tsp cayenne

For The Pizza:
3/4 cup Asiago cheese, grated
1/4 cup Parmesan cheese, grated
1 large prebaked pizza crust
1 can black beans, drained
•Preheat oven to 425 degrees.   In medium bowl, combine mango, cilantro, onion, ginger, bell pepper and jalapeno.

•Make dressing and toss with mango salsa mixture.  Set aside.

•For the pizza:  Combine Asiago and parmesan cheeses.  Sprinkle a quarter of the cheeses on pizza crust.

•Spread black beans on top (they will not cover the whole crust)(.  Spread salsa over beans.  Cover with remaining cheese.

•Bake in oven until cheese is melted and lightly golden.
