Spanish Chicken
(can also use Turkey or Pork)
For the Crock Pot

Choice of:
1 large chicken or two medium sized (cut up),
8 Chicken Breasts,
1 large Turkey Breast,
or Medium-sized Pork Roast

8 oz can of tomato paste
12 oz can of beer
1 large onion sliced thin (optional)
1 jar of green pitted olives with juice [the larger jar of olives the better. The olives and their juice really make this good]


Place meat in crock pot.  Mix tomato paste with the beer and pour over the meat along with the olives and olive juice.   Turn the crock pot on low and cook for 8-10 hours.  Steam some rice.   When everything is done put a portion of rice and meat on a plate and spoon the liquid and olives over both of them.  That's it!!  Not much cleaning up to do either.
